• Ginger is well known for its natural anti-inflammatory and digestive-supporting properties, helping to soothe the gut, support circulation and strengthen overall immune resilience — while adding that subtle warming spice that makes these gummies feel extra comforting.
• Turmeric contains curcumin, a powerful antioxidant that supports a healthy inflammatory response and immune balance — and when paired with black pepper to enhance absorption, it adds both functional benefits and that beautiful golden colour to the gummies.
1. Peel the rind from the lemon and place the rind into the mixing bowl. MILL 10 sec/speed 9. Scrape and repeat if needed until the rind is as finely milled as possible. Set aside.
2. Peel and trim the rest of the lemon and oranges so that only the flesh remains (removing white pith and ends). Add them to the mixing bowl.
3. Add ginger, turmeric, and water. BLEND 1 min/speed 9.
4. Strain mixture through a fine mesh sieve or nut milk bag. Rinse the mixing bowl then return the strained juice into the mixing bowl.
5. Add honey and black pepper. HEAT 5 min/60°C/speed 1.5.
6. Add gelatin powder and reserved lemon zest. MIX 5 sec/speed 3, then HEAT 5 min/60°C/speed 3.
7. Pour mixture into a lined brownie/lamington tray or silicone moulds.
8. Refrigerate until set. Time will depend on whether a tray or individual moulds are used (approx 1-3 hrs)
9. Slice into squares (approx 3x3 cm) or remove from moulds and serve/store in the fridge for up to 2 weeks.
TIPS:
* Pro-tip- add cayenne pepper to taste in at step 6 with gelatin and lemon zest.
* Pro-tip- black pepper increases the bioavailability of turmeric by 1000% so be sure not to leave it out
* Cheat tip- Replace the oranges, lemon and water with a premade juice (approx 600ml) for the liquid. This would allow you to start at step 5, adding the juice in with the honey and black pepper and continue the recipe from there.
* If you prefer a smooth consistency at the end result, leave the rind in after step one so it is strained out with other pulp. The lemon rind provides much more nutritional value so it is preferable to leave it in.
