This is not just your average from-the-box granola you'll find on your supermarket shelves - more often than not loaded with unnecessary sugars, gluten and hard-to-digest grains or if they happen to contain the good stuff, they often cost a bomb and end up tasting a little more like the box they came in.
This granola is a one-stop powerhouse shop for getting your morning boost, loaded with healthy fats, fibre and micronutrients plus is low GI, low carb and free from gluten, grain and refined sugar to avoid that inevitable mid-morning sugar crash.
INGREDIENTS
7 dried apricots or dried figs, cut into halves
5 pitted medjool dates, cut into halves
160g unsalted mixed nuts
80g shredded coconut
2 tsp ground cinnamon
2 tsp vanilla bean extract
30g pumpkin seeds
30g sunflower seeds
30g coconut oil, softened
3 tsbp dried goji berries (optional - see Tips)
3 tbsp hemp seeds (optional)
METHOD
1. Preheat oven to 150°C.
2. Place apricots and dates into mixing bowl. Chop using Turbo/1.0 sec/2 times.
3. Add nuts and coconut into mixing bowl and chop Turbo/0.5 sec/2 times.
4. Add cinnamon, vanilla, pumpkin and sunflower seeds and softened coconut oil. Combine 20 sec/speed 3. Transfer mixture onto 1-2 lined baking trays (30 x 40 cm) and spread evenly. Bake 15-20 minutes (150°C), stirring halfway, until golden brown.
5. Once baked, stir through goji berries (optional) and hemp seeds (optional) and allow to cool completely. Transfer to a sealable container and store in the pantry.
NOTES:
• Mix dried fruit to taste: Replace dried fruit to taste (approx. 100-150 g total, depending on your preferred level of sweetness).
• To make it go further, add 100g organic and/or gluten free oats in step 4. Gluten Free oats can be found here- https://gfoats.com.au
• Organic oats can be bought in the main supermarkets. Please note this will alter the nutritional breakdown of the recipe and it will be higher in carbs and no longer grain free.
• Swap coconut oil for melted butter, if preferred.
• Add puffed grains/seeds like buckwheat, millet etc if desired.
• To make it nut free, swap the amount of mixed nuts with more seeds.
