220g blanched almond flour
40g Vanilla Protein Powder (see notes)
30g coconut flour
2 tsp baking powder
Pinch of salt
150g banana, broken into pieces
3 eggs
50g coconut sugar/monk fruit
110 milk of choice
50g coconut oil or butter, softened
80g frozen blueberries
80g frozen raspberries
1. Preheat the oven to 180 °C and line a 12 hole muffin tray.
2. Add all ingredients except for the berries. MIX 10 sec/speed 4.5. Scrape down sides and repeat 10 sec/speed 4.5
3. Add blueberries & raspberries and fold through with spatula.
4. Spoon evenly into muffin tray and BAKE 25 minutes until slightly golden and cooked through in the center.
5. Cool for 15 minutes before serving.
